Brewed at one of the oldest and smallest sake breweries in all of Japan, run by 15th generation brewers and founded in 1540. This bottling is called Shichi Hon Yari, or “Seven Spearsmen,” after the leaders of the historic Battle of Shizugatake which was fought just outside their town of Kinomoto and which was the inspiration for Kurosawa's film seven samurai.
Made with Tamazakae rice polished to 60%. It offers a spicy, sweet rooty richness like lotus or radish root, with some mineral tones and a touch of sweetness.
Tasting Note
Dried mushroom on the nose; viscous and creamy in weight and texture; bright grapefruit notes on palate; crisp finish.
Food Pairing
Serve room temperature or warmed with mushroom risotto, nutty cheese, or stews.
