This wine combines the classic triumvirate of Xarel-lo, Parellada and Macabeo (some vines are more than 50 years old). These grapes are joined by Monastrell to give color and red fruit aromas.
The 2022 Extra Brut du Nit composed of 50% Xarel-lo, 30% Macabeo, 15% Parellada and 5% Monastrell, sourced from Conca del Riu Anoia in Pendes. Light salmon-pink in hue, it offers enticing aroams of rose and cherry, with a hint of citrus. Dry, vibrant and delicate, the saline palate is enveloped by a soft mousse. - Joaquin Hidalgo April '24

Xarel-lo is a light-skinned grape from Catalonia, north-eastern Spain, and is one of the region's most widely planted varieties. These interesting wines are highly regarded for their bracing, lemon-like acidity and stone-fruit flavors.
Catalonia (Catalunya in Catalan and Cataluña in Spanish) is an autonomous community in the north-east of Spain. It stretches from the historic county (comarca) of Montsia in the south to the border with France in the north. The Mediterranean Sea forms its eastern border and offers 360 miles (580km) of coastline. The Catalunya DO appellation was Spain's first region-wide, cover-all DO title. Created in 1999, it covers all of the scattered vineyards that were not covered by any of the region's other 11 DOs.

White wine is a wine whose color can be pale-yellow, yellow-green, and yellow-gold colored. The wine is produced from a variety of grape varieties. The flavor and color comes from the juice of the grape and sometimes the skin of the grape as well. Interestingly, not all white wine comes from white grapes. Some select red grapes are used as in Champagne.
