This unique overproof white rum is made ony from cane juice from a mix of four local cane varieties. Pere Labat 58 is produced at Distillerie Poisson, one of only 4 distilleries on the small island of Marie-Galant which is just south of Guadeloupe.
It comes off the still between 69-71% and is slowly proofed down to 59% over 10-15 days in open top wooden vats.

1 small, rounded disc of lime
1 tsp. cane or simple syrup
In a rocks glass, stir together the rhum and cane syrup. Squeeze the lime disc over the top and drop into the glass.

Made from molasses, it was in finding a use for the byproduct of sugarcane, in the Caribbean, that Rum came into being. Every island has its own distinct style, with each of the island's distilleries producing a further variation . While white rums readily form the base for a number of varied cocktails, dark rums, aged in ex-bourbon and cognac barrels, can take on great depth of flavour. They typically exhibit exotic, tropical-fruit aromas and a warm spiciness that, like any great spirit, is worthy of appreciating on its own.
