Parhelia Cask #6 New Yarmouth Winston Kennedy Rum 69.4% - 2019 (700ml)

New Yarmouth’s WK marque is the highest ester marque they produce. The distillery is probably one of the most enigmatic distilleries in the rum world and certainly the most secretive in Jamaica, adding mystery to our spirit beyond the fact that it was produced on a pot still and made partially with sugarcane juice. This cask aged for well over 2 years in an ex-bourbon barrel and features a heady tropical fruit and strawberry note that will leave fans of other high ester rum—such as Hampden’s DOK—satisfied. Beyond its cask maturation, this spirit rested over three years in a stainless steel tank prior to casking, helping to refine but not tame the powerful pot still flavor. Beyond the benefits of maturing the spirit, the long rest in steel yielded a product that is wonderfully quaffable at 69.4% ABV.

In keeping with our goal of maximum transparency, Parhelia Spirits had the general congener and specific ester levels measured at a spirits laboratory in winter 2026, here. We understand that Jamaica rum lovers often like more precise measurements of the intensity of certain flavors, and we hoped to furnish as much data as possible. For those rum aficionados seeking maximum punch, this Winston Kennedy cask has 2,343 g/HLPA of total congeners, including 1,281 g/HLPA of ethyl acetate, which is only one ester common in Jamaica rums.

Tasting Notes

The nose leads with a powerful hit of strawberries and fresh pineapple and granny smith apple carries a distinct fruit-forward spirit. Further contemplation yields lactic dairy notes, including chèvre and cultured brown butter. On the palate, the cask adds structure and roundness, but the nose holds true with cohesion that belies its ABV and ester intensity. The finish transitions to compound berry and stonefruit, including blackberry, raspberry, and damson plum with an undergirding of butterscotch and caramel.
