Vinification at low temperatures helps to protect all the typical but sensitive aromas of Moschofilero. As a result, "White in Gray" is an intensely aromatic wine that balances the aromas of evening primrose, rose and citrus.
Its excellent aroma, balanced taste and slightly acidic aftertaste make it a wine that you can enjoy as an aperitif as well as an accompaniment to meals such as pasta with basil, chicken ala crème, grilled shrimps and pies. Served at 8-10°C.

One of the more commercially important indigenous Greek varieties, it can exhibit a wide range of characteristics, from soft to very tannic, depending on factors in the growing and winemaking processes. The grape is typically made as a varietal, though it is notably blended with Cabernet Sauvignon in the area around Metsovo to make the table wine traditionally called katoi. The wines are known for their high level of fruitiness but tend to have very little acidity and light body. After Xynomavro, it is Greece's second most widely planted grape variety.
