Harvested fruit is chilled quickly and pressed in an effort to avoid oxidation. Primary fermentation occurs in temperature controlled, stainless steel tanks over 15 days. Secondary fermentation occurs in bottle. Aged for 12 months, on lees, before disgorgement, dosage of 8 g/l.
In this traditional Brut, Xarel·lo offers the foundational structure for aging, Macabeo lends
elegance with delicate bitter notes, and Parellada connects the elements with its refreshing, citric acidity. Exhibits a pale-gold aspect, fine bubbles, and a nose of zesty citrus and soft, floral notes. The palate is creamy and elegant with sweet fruit and almonds.

Product Review
Piercing woody aromas are about all you get on the nose of this barrel-fermented blend of Viura and Tempranillo Blanco. The palate is crisp, tight and resiny, while overtly woody flavors outweigh background white-fruit notes. A resiny flavor is front and center on a barrel-driven finish.

Viura is mostly used to make mildly acidic and young white wines. As a varietal its shows its gentle acidity complemented by medium body and notes of peach and citrus.

White wine is a wine whose color can be pale-yellow, yellow-green, and yellow-gold colored. The wine is produced from a variety of grape varieties. The flavor and color comes from the juice of the grape and sometimes the skin of the grape as well. Interestingly, not all white wine comes from white grapes. Some select red grapes are used as in Champagne.
