Katsano
Katsano is an extremely rare Greek white grape variety that is grown on the island of Santorini, Greece. It is an old grape, one of the 50 or so varieties once grown on Santorini. Nowadays, the fashionable Assyrtico variety dominates the island, with Katsano representing a tiny proportion of total vineyard area. It produces yellow wine with green highlights and good acidity, often described as having sweet lemon-blossom and honeyed aromas. The volcanic soils of Santorini impart a distinctive minerality to the wine and the maritime influence has been said to add a little salinity to the grapes' skins.
Gavalas Winery is one of the only commercial producers making varietal wine from Katsano. Even in this example, it is more common for the wine to be blended with another obscure grape variety, Gaidoura.
