KAGATOBI is named after the in-house firefighters of Kaga (ancient name of Kanazawa area) mansion Edo (ancient name of Tokyo) branch, who were tough and powerful, highly skilled but short-tempered. They were known as "Cool" firefighters and were always popular among people in Edo. Brewed with high-quality sake rice and our groundwater, its wide variety of tastes will gratify your many demands on sake flavors
Aged for 1,000 days. Well-balanced full-bodied sake with exceptional mature flavor.
This 3 year aged Koshu-style, or aged sake shows great depth with hints of roasted nuts from the aging combined with an ethereal, light as lace mid-palate from the high polish ratio of the rice.

From Niigata, Fukushima, Toyama, and Ishikawa. Smooth and clean and dry and slightly fragrant. Representative Sake Brands: Shimeharitsuru and Kubota, or just about anything from Niigata.
The pure waters flowing off Daisetsu-zan are one reason that Asahikawa has long had a flourishing sake industry.
