The Hardin's Creek Distillation Profile Series explores how the structural "proof off the still" alters flavor development when all other variables remain identical. Each expression is aged for 8 years, bottled at 109 proof.
THE CONCEPT
Stripped of the heavier oils by being taken off the still at a much higher proof, this distillate goes into the barrel clean and lean, allowing the wood and fruit esters to dictate the final character.
TASTING NOTES
Drives toward bright orchard fruits, crisp apple or citrus notes, light floral honey, and a cleaner wood spice rather than heavy, dense sugars.
