PRODUCTION: Extraction of botanicals is is by cold maceration of dried herbs, and hot maceration, in neutral grain spirit. All botanicals are prepared individually and added to a combination of the wine, sugar and alcohol. Rested in stainless steel for 45 days then moved to cherry barrel for an additional aging period of approximately 2 months.
INGREDIENTS: 16 different botanicals, as prescribed in an old Italian recipe; including wormwood romana, yarrow, lemon balm, rabarbaro, thyme, centaurea (a thistle), iris root, bitter orange peel, Gentiana lutea, mugo pine, elderflower.
BOUQUET: fruity from the base wine with a strong herbaceousness.
FLAVOR: Using schioppettino wine from Fruili as the base, Fred likes to call this his “fearless vermouth,” coupling the slightly tannic body of the wine with maturation of the vermouth in cherry barrels to enhance both its fruitiness and structure. Both bitter and savory at first taste, the fleshiness of the wine takes hold midway and finishes with an intense herbaceousness with strong notes of licorice.
Note: This may throw a sediment, which is a sign of minimal processing and high quality.
