Production: first resting for five years in the Caribbean, inside American oak casks. Later shipped to the facilities of the Williams & Humbert winery in Jerez (Andalucia - Spain) where it undergoes the final stage of ageing, which lasts for three years, in casks which have previously been used to age the international award-winning sherry "Dos Cortados" with a guaranteed age of 20 years as: certified by the Denomination of Origin Jerez-Xérès-Sherry. Awards won by Dos Maderas 5+3: Bronze medal at the International Rum Festival (San Francisco) 2008. Silver medal at the San Francisco World Spirit Competition 2008.

Made from molasses, it was in finding a use for the byproduct of sugarcane, in the Caribbean, that Rum came into being. Every island has its own distinct style, with each of the island's distilleries producing a further variation . While white rums readily form the base for a number of varied cocktails, dark rums, aged in ex-bourbon and cognac barrels, can take on great depth of flavour. They typically exhibit exotic, tropical-fruit aromas and a warm spiciness that, like any great spirit, is worthy of appreciating on its own.
