This special edition of Calio Rum began as an experiment. While our standard edition of Calio is fermented with a rum yeast, this edition was fermented with a whiskey yeast. Then, we entered the distillate into a barrel that had been previously used to age whiskey and our barrel aged gin.
The rum aged for over four years, and could therefore qualify to become a Bottled in Bond release. To qualify, the spirit must meet all of the relevant standards for the class and type of the spirit in question; it must be distilled and bottled at the same distillery; it must be a minimum of four years old; and it must be bottled at exactly 50% ABV (100 proof).
Of course, you want to know what it tastes like. A difficult question! The flavor has an unusual combination of elements. The warm smooth molasses rum taste is present, along with gin overtones and whiskey notes from both the whiskey yeast and the whiskey originally stored in the barrel. It’s a mélange of flavors, coming together to create a new combination.

Made from molasses, it was in finding a use for the byproduct of sugarcane, in the Caribbean, that Rum came into being. Every island has its own distinct style, with each of the island's distilleries producing a further variation . While white rums readily form the base for a number of varied cocktails, dark rums, aged in ex-bourbon and cognac barrels, can take on great depth of flavour. They typically exhibit exotic, tropical-fruit aromas and a warm spiciness that, like any great spirit, is worthy of appreciating on its own.
