This PetNat is a blend of Grüner Veltliner, Roter Veltliner, and Riesling grapes from the Spielberg vineyard in Austria. The grapes are harvested by hand and fermented with natural yeasts. The wine is bottled before fermentation is complete, which results in a sparkling wine with a slight fizz.
The wine has a bright yellow color and aromas of freshly squeezed grape juice, fig, and physalis. The flavors are fruity and spicy, with a hint of gooseberry. The wine is dry and has a refreshing acidity.

From 23 year old vines planted to 3ha, the grapes are hand-harvested at the beginning of October, de-stemmed and allowed to macerate for 14 days. Spontaneous fermentation lasts for eight weeks with temperature control and spends around 20 weeks on the lees, with stirring once a week. Unfiltered.
A 20th century German crossing created by Georg Scheu, Scheurebe is capable of producing opulent forest fruit flavors of blackcurrants, which can sometimes be complemented with grapefruit and citrus aromas. Originally thought to have been a crossing of Riesling and Silvaner, recent DNA profiling suggests the second parent is not Silvaner but an unknown wild vine.
