This wine is a blend of 80 Grenache (actually, its genetic precursor Ledener Pelleu) with the remainder made up of a pre-phyloxera field blend of grapes nominally Mourvedre and Syrah. The grapes are organically farmed using biodynamic methods and no sulphur is used during winemaking, only at bottling.

This tank-aged blend of 80% Syrah, 10% Grenache and 10% Mourvèdre is about as plush and creamy-textured as this schist-based appellation gets. The 2017 Mas Olivier Parfum de Schistes features tar, violets and blueberries backed by an undercurrent of crushed stone, crisp acids and a long, stony finish.

The Languedoc and Roussillon are two adjoining but distinctly separate wine regions in southern France. The Languedoc consists of two main regions: The Aude, home to the sub-regions of Limoux, Corbieres, Fitou, Minervois, and the Herault, which includes Picpoul de Pinet and the vin doux naturels producing regions of Banyuls, Frontignan, Lunel and Mireval.
