It has 12.5% alcohol and a pH of 3.25. It's varietal, light, fresh and very balsamic, with intense notes of camphor, bay leaf and even mint, medicinal and pungent. It has a clean and bright color denoting youth and a clean and precise palate with mellow acidity and a bitter twist in the finish. 50,000 bottles produced. It was bottled in February 2024.

Xarel-lo is a light-skinned grape from Catalonia, north-eastern Spain, and is one of the region's most widely planted varieties. These interesting wines are highly regarded for their bracing, lemon-like acidity and stone-fruit flavors.
Catalonia (Catalunya in Catalan and Cataluña in Spanish) is an autonomous community in the north-east of Spain. It stretches from the historic county (comarca) of Montsia in the south to the border with France in the north. The Mediterranean Sea forms its eastern border and offers 360 miles (580km) of coastline. The Catalunya DO appellation was Spain's first region-wide, cover-all DO title. Created in 1999, it covers all of the scattered vineyards that were not covered by any of the region's other 11 DOs.

White wine is a wine whose color can be pale-yellow, yellow-green, and yellow-gold colored. The wine is produced from a variety of grape varieties. The flavor and color comes from the juice of the grape and sometimes the skin of the grape as well. Interestingly, not all white wine comes from white grapes. Some select red grapes are used as in Champagne.
