An important thin skinned white grape used in the production of sherries mainly grown just north east of Jerez in Montilla-Moriles in Andalucia . Although Pedro Ximenez (PX) is capable of making a light, somewhat bland white table wine, most grapes are dried in the sun to an almost raisin like state which are then used in making either a lusciously sweet 100% PX sherry or blended to sweeten dry sherries, such as Olorosos, made from Palomino.
