Whole clusters are chilled overnight and then fermented with indigenous yeasts in old Bordeaux barrels The time in the barrel is limited to three months because no SO2 is used during the entire process. The wine is bottled without filtration. 800 bottles are produced per vintage.
This wine is a unique take on white Bordeaux, with a focus on Muscadelle, which Lou, the winemaker, described as floral and lower acid. It offer perfumed apple blossom and yellow apple aromas with a hint of sweet almond. The body is rich and the acid round, so this should work very well with shellfish dishes or creamy soups.
