Made from old vines between 33 and 87 years grown on mice-rich granitic sand and clay using certified organic methods.  Hand harvested and fermented with native yeasts, aged on the lees for a minimum of 3 years after a long slow fermentation. Bottled with minimal sulfur.

This wine presents a very pale color with expressive aromas of an orchard full of russeted pears and green apples with an undertone of beeswax. The flavors expand to include a gentle mineral bitterness which adds freshness and would be a perfect foil to the classic match of oysters.
