Assyrtiko is an excellent Greek grape, origin from the Santorini island. It is cultivated all over Greece, producing great wines with characteristic high acidity and mineratliy. Crete plays an important role in the production of high quality wines from the Assyrtiko grapes as the one from the Cretan mountainous vineyards typically has more intense aromas of herbs and while flowers. Assyrtiko wine is the best pairing with fish food. Ideal for wine connoisseurs looking to age their white wines in a cellar.

One of the more commercially important indigenous Greek varieties, it can exhibit a wide range of characteristics, from soft to very tannic, depending on factors in the growing and winemaking processes. The grape is typically made as a varietal, though it is notably blended with Cabernet Sauvignon in the area around Metsovo to make the table wine traditionally called katoi. The wines are known for their high level of fruitiness but tend to have very little acidity and light body. After Xynomavro, it is Greece's second most widely planted grape variety.
