2021 was a fantastic vintage for both red and white varieties in California. The Layer Cake Cabernet is a rich, yet balanced blend of grapes from Alexander Valley and Paso Robles. Their vineyard in Alexander Valley has a section that is part of an ancient volcanic eruption of Mt. St. Helena, yielding rich wines with mineral characteristics, while the cool air that pours in from the Pacific each afternoon helps to maintain acidity that is bright and fresh. In Paso Robles, the vines are in deep, sandy loam soils sprawling over rolling hills. The deep roots combined with long, warm days give the wine dense black fruit aromas and mouth-filling flavors.
The Layer Cake Chardonnay is a blend of Monterey and Santa Barbara fruit that is made with minimal intervention, allowing the fruit and place to speak for itself. Their Monterey vineyards border the Santa Lucia Highlands, showcasing shallow, granite-laced soils that lend mineral characteristics and beautiful aromas of citrus blossom. Cooling winds flow in from Monterey Bay each afternoon and preserve the crisp acidity and delicate aromatics of the Chardonnay clusters. Their Santa Barbara vineyards are in the steep hills surrounding Los Alamos, in a canyon that leads directly to the Pacific Ocean. Sandy soils, bright sunshine and cool ocean breezes combine to lengthen ripening and extend hang time, resulting in a combination of tropical fruit characteristics and great structure.
