Limniona is a heartily textured red grape grown on the mainland of Greece. Zafeirakis follows organic and Biodynamic growing methods to produce this young vine red. Aged for a short period in larger oak vats to help smooth the edges, this would pair well with grilled or roasted meats, herbed dishes such as pesto or dilly Persian rice etc.

A hard to find red variety, mainly cultivated in Thessaly in the areas of Karditsa and Tyrnavos. It gives special, delicate, red wines, with dark red fruit aromas on the nose, but also characters of minerals, spices and herbs. It has a rich tannic content, which gives nerve and personality, but not aggressivnes or richnes. Has strong acidity and high alcohol. It is from the wines that age well and it is a promising variety.
Thessalia (Thessaly) is an administrative region in mainland Greece, bordered by Greek Macedonia, Central Greece and the Aegean Sea. While it is not the best known of Greece's wine regions, either viticulturally or historically, it has a thriving viticultural industry that is mostly located in the mountains that surround the region.
In the middle of mainland Greece, the Thessalia or Thessaly region lies on a coastal plain that extends inland from the Pagassitikos Gulf and Aegean Sea, has Pindos Mountains to the west and Mount Olympus, the mythical home of the Greek Gods to the northeast. At the foot of the sacred mountain, is where the Tyrnavos vineyards are located.
Red wine is wine made from dark-coloured grape varieties. The color of red differs based on the grapes variety or varieties used.Interestingly, black grapes yield a juice that is greenish-white. The actual red color comes from anthocyan pigments (also called anthocyanins) from the skin of the grape (exceptions are the relatively uncommon teinturier varieties, which produce a red colored juice). Most of the production centers around the extraction of color and flavor from the grape skin.
